In order to enhance international competition after joining WTO and consumers’ health in Taiwan, aquatic industry not only improves quality to comply international standards of safety and quality but also establishes database of risk assessment to well manage the risks associated with aquatic foods. In this study, the risk factors were collected and analyzed and field examination data of the recent 3 years (from 2006 to 2008) was computed to determine the risk values based on the theory of toxicology. The major 7 aquatic products, tilapia, milk fish, shrimp, eel, clam, grouper, and seabass were analyzed. Risk assessment was further analyzed according to aquatic products, producing area, and antibiotic residue.? According to aquatic products, the order of risk from high to low is clam, shrimp, tilapia, milk fish, seabass, grouper, and eel. According to producing areas,
Chiayi, Yulin, and Tainan Counties are the high risk areas. Analyzing results of antibiotic residue showed the average or maximum residue risk were very small when being compared with acceptable daily intake (ADI) of the antibiotics. Results of this research could be the base for risk management, sampling, and risk communication of government agencies and consumers.? |
