Squid in the PH6, 1.17% salt and 5 ℃? storage conditions can effectively inhibit fading skin color speeds up to 2 - 4 times. Controlled enzymatic hydrolysis of squid proteins (muscle, viscera and skin) by five kinds of enzymes, papain, protease N, Neutrase, Flavourzyme and Alcalase . The bioactive peptides can be released by enzymatic proteolysis of squid protein and the free radical scavenging activity, angiotensin-I-converting enzyme inhibitory activity α-amylase inhibitory activity, tyrosinase inhibitory activity were assayed. Skin hydrolysates have a higher angiotensin-converting enzyme (ACE ) inhibitory activity and free radical scavenging efficiency. The study found that using two kinds of enzymes, papain and Alcalase hydrolysis method?? has a higher yield of peptide products. The product can be divided into molecular weight 5KDa above ,1-5KDa, 1KDa below and non-separating four kinds of samples by ultra-filtration methods. Samples molecular weight lower than 5KDa? with higher free radical scavenging efficiency and angiotensin-converting enzyme inhibitory activity,? Controlled enzymatic hydrolysis of squid proteins may produce a series of small polypeptides which can modify and even improve functional properties and the application of squid proteins. |
