Chronic diseases such as cancer, stroke, heart disease, hypertension, and diabetes mellitus are always among the top ten causes of death in Taiwan area recently. A strong association between the chronic diseases and obesity as well as the intake of food high in saturated fat or low in dietary fiber was demonstrated by lots of studies; that is, inadequate dietary practice is the prime culprit behind the chronic diseases. Aquatic products are of great health potential and which make them the perfect materials for healthy cooking to prevent or delay the prevalence of chronic disease. Chinese medicated diet has a long history and most people are convinced of the philosophy of “food as medicine” and live up to it. Based upon the above facts, the aims of this study were to take aquatic products as the major materials to develop Chinese medicated diet products offering immunomodulatory functions, to evaluate the immune-modulating activity of the designed products in vitro and by meridian energy analysis, and to conduct a promotional exhibition to introduce the feature products to both the general and the food business. The major results are summarized as follows:
1.Data of sensory evaluation revealed that Shen-Qi tilapia soup (參耆吳郭魚肉羹), Rou-cong-rong grouper soup (肉蓯蓉石斑魚湯), Long-yan four-flavor stripped bass soup (龍眼四味鱸魚湯), and Shanyao-Doushou milk fish (山藥豆燒虱目魚) were of higher scores among the total of 32 cooking combinations. The four Chinese medicated diets featured seafood, thus, are of great developmental potential.
2.The four designed Chinese medicated diets featured seafood showed immunomodulating activities as measured by meridian energy analysis. Among the 12 main meridians, lung, spleen, stomach, kidney, bladder, and gallbladder meridians were significantly affected by the designed diets.
3.Based on the results of DPPH radical scavenging assay, ferrous chelating assay, and reducing power assay, all the four Chinese medicated diet water extracts exhibited significant antioxidant activities. The viability of RAW264.7 macrophage cells was not influenced as the concentrations of the four medicated diet water extracts were no more than 0.25 mg/ml. The productions of NO, IL-6, and TNF-α were significantly reduced in the LPS-stimulated RAW264.7 macrophage cells by the water extracts of the four medicated diets at the concentration of 0.25 mg/ml. With the addition of the four mediated diet water extracts, about 4- to 5-fold increases in phagocytosis of J774A.1 macrophage cells were observed as compared to the control. |
