Japanese sea bass, Tilapia, Milkfish and Oyster are important cultured fishery species in Taiwan. The effects of distribution temperatures, mainly at 18℃,5℃,0℃,-5℃&-18℃, and methods, mainly by plastic containers made of expandable PS or PU on the quality and shelf-life of these four kinds of fishery materials were investigated in this study. According to three indices of sanitary quality and the result of sensory evaluation, the suggested shelf life, in terms of days, under 18℃,5℃,0℃,-5℃&-18℃ for fresh eating and non-fresh eating were (0,1),(3,7),(5,12),and(7,14), respectively. Data about multi-temperature distribution in Taiwan and other countries have been collected, processed and needs of consumers have been analysed. Distribution of frozen and chilled fishery products with cold box is workable, becaucse its capacity attains more than 10 hours. |
